The Rubis cuvée is our top of the range wine. We produce this wine only in those great years we think it will represent the values of our winery.
The Rubis has a beautiful almost black deep garnet red color. It has an open, rich and complex nose with intense aromas of fruit cream, cocoa bean, black fruits and sweat spices.
After some air, we obtain caramel touches and mild tobacco, almost peaty. Touches of ageing in french oak barrels reveal secondary notes of vanilla, clove and roasted coffee to enhance complexity.
The palate is rich and juicy. Tannins are smooth. Influnced by barrel agging, the wine is creamy and delicate. Wait 2 to 5 years to allow the wine to open on fleshy notes of black fruits jam and sweat spices..
Drinking window : 10 years
The average age of the vines is 80 years.
When we produce this wine, we produce 5 hl. The yield is average 18hl/ha.
Fermentation in barrels during 6 months and aged in demi-muids during 18 months.
Tasting (16°) :
To serve with duck with olives, guinea fowl or a piece of beef. Truffle will pair perfectly with it as well as stuffed poultry and game feathered.
